Choix du Coeur
After the harvest is over, and our Pinot noir is resting gently in the barrel for over a year, our winemaking team will regularly taste and evaluate how that vintage is coming along from both Résonance and Découverte vineyards. Eventually, small differences arise from barrel to barrel, and it becomes impossible to not pick favorites. The Choix du Cœur wines are the result – meaning “Heart’s Choice,” these extraordinary bottles come from a scant five barrels from each vineyard that stood out from the rest until our winemakers had to just follow their hearts, and create this limited cuvée.
